A borderland or frontier is, of course, the stretch of land on either side of a border, but also, and more interestingly for our purposes, a zone of indeterminate overlap. Showing similarities in recipes from rival villages, techniques from across the sea and the cooking from one side of a mountain range to another, it is the space in between pesto in Genoa and piston in Provence. Frontières is a love letter to French cuisine, and an exploration of the influence its neighbouring regions have not just on the palate, but on the heart.
This is the French food that we are interested in - rustique, simple, humble and delicious.
