L'âme parisienne se réchauffe dans les bistrots. Des lieux où le quotidien s'égrène doucement, à la cadence de l'horloge biologique d'un quartier, du café des petits matins au dernier verre du soir. L'espèce est pourtant en voie de disparition après qu'on lui a largement pillé ses décors ou son style pour les mettre à toutes les sauces, sans grand discernement. En oubliant l'esprit, sans lequel un bar n'en est pas vraiment un.
