SPECIAL BONUS WITH THIS BOOK: The "Colonel's" Original Recipe! This was given to us by one of our former competitors about 10 years ago. We don't know where he got it and unfortunately, he's no longer around to tell us. But we've tried it and it tasted pretty close to the original! We've been operating a small restaurant in our town since 1980 and we've learned a lot over the years. We offer eleven chapters dealing with various aspects of the pizza and restaurant business.
The first one shows how we make our calzonies and pizza rolls (aka Strombolis). We also offer some advice on making your own pizza dough. Chapter 2 deals with chicken wings. Here we discuss the pros and cons of using either fresh or steamed wings. We also provide several of our secret sauce recipes. This is where we show you the "Colonel's" recipe. Chapter 3 includes recipes for deli salads as well as our versions of Caesar and Chef salads.
Chapter 4 reveals some weekly specials that have worked for us. Setting aside certain days for these specials is a good way to get regular customers coming in on specific days. In Chapter 5, we show you how to make some of our specialty pizzas, if for no other reason than to keep your competitors from stealing your customers. Chapter 6 is all about improving your lunch business and how to make things go smoothly and quickly so your customers don't spend much time waiting for their orders.
In Chapter 7, we discuss appetizers, but not which ones to buy. That's your job. We show you how we take advantage of special offers from certain companies to introduce new appetizers to our customers at bargain prices and to see how much they like them. Chapter 8 deals with subs and sandwiches. We offer some timeless classics and interesting variations on them. We also describe one of the "Dagwood" sandwiches offered by one of our friendly competitors in another city.
Chapter 9 is entitled "Boxtoppers." These are just flyers designed to drum up interest in some of our products or events. We've been offering monthly calendars to our customers since January 1988 and many of them look forward to them every month. Chapter 10 offers some solid advice about catering. If you're thinking about getting into this field, you should find the information here very useful.
And finally in Chapter 11, which is called "Outsmarting the Competition, " we share eight low-cost strategies that can give you an edge over your rivals. Some of these we got from a few of our friends in other cities. It often pays to have informal cooperative agreements with other places far enough away that do not compete directly with you. By the way, none of these are illegal!
