I spent a lot of time in the kitchen helping my mom. My mom could make a lip-smacking meal out of anything and taught me a lot of her cooking secrets and methods. The one thing that always makes me smile is one of her measuring methods; A little pinch of anything was what she could pick up with the tip of her forefinger and thumb; a big pinch is what she could pick up with her forefinger bent and her thumb pinching a generous amount of whatever she would add to what she was cooking.
I can still hear my mom telling me "There may be times in your life when you will need to do your own cooking". I have spent well over half my life cooking for myself and enjoying so many of the things my mom taught me to cook during my early years of KP duty. She wrote some of her recipes down and many more I was fortunate to remember. I put these, as written and remembered, here in "My Mom's a better cook than yours" for you to enjoy these simple but delicious recipes along with some personal anecdotes I hope you'll enjoy.
